A unique addition to La Mer’s already existing list of casual diners, Slab at the waterfront is a must-try. Boasting of an international, evolving menu inspired by all corners of the world, their main aim is to introduce seasonal dishes that celebrate the freshest produce of the season combined with unique international flavors. The decor is simple, minimalistic with shades of white and grey. The restaurant has an indoor and patio setting with an open kitchen where you can interact with the chef and see your food being made. Every dish is well-plated, almost like a piece of art that gives you a fine-dining vibe in a casual, relaxed setting.

Head Chef Omar Rodriguez describes his food as contemporary and modern with a slight focus towards healthy. He’s not just an ordinary chef. He’s a creative genius who experiments with the freshest, most basic ingredients and makes every dish a masterpiece that is as pleasing to the eyes as the taste buds. The menu features a handful of breakfast items, sandwiches, tartines, salads, meats, sides, mocktails, coffees and desserts. I’ve been there twice so far – once for a Chefs Table and second time for a tasting of their newly launched summer menu. Both times, I’ve had a fabulous experience. First, I’d like to take you through the summer menu:

Their newly launched summer menu features fruity flavors, refreshing drinks and delectable summer foods and is available until October.
– Watermelon & Feta Salad: Salty, sweet and refreshing summer salad
– KFC: Sweet and spicy with crunchy cashews and spring onions, Chef Omar’s version of KFC is Chinese-inspired Kung Pao chicken wings – a perfect example of a finger-licking good dish
– Smoked Beef Jam on Grilled Sourdough: Tender, smoked meat with sharp flavors of truffle mustard topped with zesty chilies and sour pickles
– Stracciatella & Heirloom Tomatoes: Rich, creamy, melt-in-the-mouth Stracciatella with heirloom tomatoes, peach and basil make this a bright and fragrant dish. Surely something you want to dive into after a hot summer day
– Snapper Ceviche: A light and refreshing ceviche with perfectly balanced flavors
– Tart Flambe: Made on a piece of thin, rolled-out bread dough with cheese, sweet onion, and veal bacon – a simpler and crispier version of a pizza
– Tres Leches: Milky, airy, spongy, decadent cake with berries and cornflake crunch

– Amuse-bouche: Similar to a croquette served with corn and cheese
– Beetroot Salad: I’m yet to try a salad with so many textures and flavors. Seed butter, savory-sweet beetroot, smoked dates, earthy-tart notes of whipped goat cheese, crunchy quinoa-nut crumble and bold flavors of arugula and red vein sorrel all in one dish – surely packs a lot more zip than most other beet salads I’ve tried to date
– Bread: Freshly baked bread served with cultured yogurt butter and fried herbs. You may think it’s just bread-butter, but it’s definitely much more than that. Perhaps, even more addictive than you’d think it to be
– Kale Salad: Kale with its chewy texture and earthy, green flavors, crispy-crunchy shallots and zesty red chilies tossed together with a tangy lime vinaigrette makes this a hearty, light and refreshing salad
– Smoked Lamb Ribs: The deliciously sweet and smoky flavors of charred onions add a different element to the 16-hour slow cooked, succulent meat. Garlic labneh and herb salad are beautiful accompaniments to the intense flavors
– Crab Toast: This spicy crab toast is a perfect example of a simple yet fab dish made using the most basic ingredients. Love how the meat gets a spicy kick when paired with spicy aioli
– Insanity Pie & Chocolate Mousse: Rich, smooth, creamy – desserts you can never get enough of
